Passover Leftovers, Dilemma or Dilemna? Not Your Bube's Recipes!

Dilemma or Dilemna: First we should discuss the difference between the two words. The first usually consists of one or more undesirable options, while the latter is usually all just errors and undesirable options. Based on my childhood memories of Passover, I'd say it is a definite dilemna! Months before Passover I would start dreading the upcoming holiday and the bla'ness of matzo. For decades I have spent most of the holiday trying to make matzo pizza, matzo pasta, matzo bread and hundreds of ways to try and make matzo not taste like matzo. Now I understand why I have dreaded this holiday! I spent so much time trying to create 'new' ways to use matzo and its byproducts that I didn't spend any time on how to turn the leftovers into my favorite dishes! Until this year that is! Passover leftovers is now a dilemma with amazingly delicious and desirable culinary options awaiting. I still do acknowledge there are some undesirable options as well ;)

How did it never dawn on me, or my mother, to use the brisket as a starter for other dishes? It could be that my father cherishes my mothers brisket, it is one of his favorite foods. He would tell you it is heavenly and there is absolutely no reason to eat it any other way than how it was originally prepared. So, for decades, I did. What makes this year different from all other years? (see what I did there) This year I decided to try and make hash out of my mothers Passover Seder slow cooked brisket recipe, and it was DELICIOUS! Then I got even more bold and for dinner the next night. Using the rest of the same brisket leftovers I made slow cooked chili. The chili was DELICIOUS! I am now out of brisket leftovers, and I wish I had more there are so many culinary experiences I need to have with my moms brisket recipe; Boston baked beans, bubbles and squeak, brisket croquettes, shepards/cottage pie! Maybe I will even get so bold as to try to make a matzo meal version of bisquick cheeseburger pie (minus the flour and cheese that is).
